Advice for a single female looking to relocate from uk

Good evening,
I am travelling over on 20/12 for a week to have a look around and also check out some places that have been recommended to me. I am hoping to move from uk as a digital nomad, been and had a look at some of Spain but not sure it’s what I’m looking for. I love nature and I ride (horses) and am looking for somewhere not so touristy but where I can also meet people and make some connections. Looking to rent, ideally with some outside space as I love my garden and being outside. Am early 40’s. if anyone had any advice at all on location, movinG, anything at all I would be very grateful
